Persimmon Carob Overnight Oats

I do love me some persimmons. They are the queen of fruits during fall/winter season – when they are ripe, the burst of flavourful juice in my mouth just drives me wild.  My friendly neighbor was blessed with copious amount of persimmons this season and they were not shy to share loads with me, yay!  With it came my new favourite breakfast that I’m sharing with you today.

Persimmon Carob Overnight Oats are sweet yet savory, super healthy and easy to prepare. Like its self-explanatory name, you can make it in the evening which takes about 5 to 7 minutes and have it in the morning if you wish.

Persimmon hails as “food of the gods”.  They have effectively been beautifying and nourishing our skin for generations with its antioxidant capabilities and powerful vitamins to boot.  They are an excellent source of Vitamin C, B-Complex and fiber, keeping our bowel movements regular.  The lush orange hue of the persimmon provides us with beta-carotene, lycopene, lutein and cryptoxanthin — protecting us from cancerous diseases.

Second main ingredients in this recipe are turmeric and carob.  I have used turmeric in other recipes like the Essential Dressing and Butternut Squash and Mushroom Soup.  The healing and anti-inflammatory benefits of turmeric’s been researched extensively; in this overnight oats recipe, it just gives this breakfast that “rocking factor” in making it super nourishing go-to number.  Carob’s been getting lots of attention amongst the nutritionists and health coaches lately for its health benefits which includes, analgesic, anti-allergic and antibacterial reasons but also for its beautiful earthy taste.  Well, I think persimmons and carob make a nice flavor combo- I’m totally lovin’ it!

Prep time  5-7 minutes

Ingredients

Serving | makes 1

  • 2 persimmons
  • 1 tsp grounded carob
  • 1 tsp turmeric powder
  • 1/3  cup rolled oats
  • 1/4 cup almond milk
  • (optional) to sprinkle, coconut flakes & honey

Instruction

  1. Blend persimmons, carob, turmeric, almond milk & sea salt.
  2. Add rolled oats to the mix and hand stir to even out the mix.
  3. Transfer to a nice jar and garnish as you wish on top with more carob, cocount flakes & honey.
  4. Enjoy half an hour later or next morning!
